- Grill the chicken breast and then chop it into small bite-size pieces.
- Heat the extra virgin olive oil in a large stock pot and then add onion and garlic, stirring and cooking for about 2 minutes.
- Add the tomatoes, green chilies, cumin, taco seasoning, and chicken, stirring and cooking for about 2 minutes.
- Add the beans, chicken broth, and water. Season to taste.
- Bring to a boil, turn to low heat, and simmer for 20 minutes to 1 hour. Add the cilantro about 5 minutes before serving.

This tasted great and was so easy. I made with roast chicken from the grocery store and added extra chili peppers. Easy for others in house not on diet to eat..my husband had it over rice with some sour cream and loved it...will make this again and again.

It wasn't my favorite... a little too strong for me... but if you are a taco connisour, definitely go for it!

Umm, Umm good. I made it with Northern Bean instead of cannellin beans. Diced tomatoes instead of stewed. So good.

Sounds delish? I make one almost identical to this but add black beans. And don't do the green chiles but that sounds like a great touch. I will have to start adding those in to kick it up a notch!! Yummy!
