I have been busy cooking for the week today. usually do this Sunday but I plan on going to the beach. I love it when it is cold and windy with little to no people.
Made some homemade lentil soup, stuffed peppers. I cooked up a chicken to use throughout the week. of course made cookies the for the grandkids. they leave with them otherwise I would eat them all!!
Went for walk with my 2 dogs on a spooner harness, quite the workout wonderful day for it though.
tonight a chiminere(?) fire should be so relaxing with spouse and nice end to a very busy day.

I saw recipe for "oopsie rolls". they are suppose to be a carb free bread substitute. they are made with eggs and cream cheese.
I made them and they are a poor bread substitute. they taste like a really light airy egg. I added chives and garlic to mine. they are good as a change but no way do they make for a second think of making a sandwich with them.
has anyone else tried these? what are your thoughts?

found the best cauliflower crust pizza recipe yesterday. it was awesome!
I have made others in the past but they just did not feel like I was eating pizza,this one did. the trick is that you wring out the water of the cauliflower after you have microwaved it. the cauliflower then takes on a flour type texture.
it held itself together so you could cut it pick it up and eat a slice.

my husband did not realize it until I told him.
That was my positive for the day. hope you all will try it if you are looking for pizza :)

oh boy no loss BUT no gain!
need look over my food entries see where I might have strayed.
it is ok this is a journey
on positives I have been steady with my exercise and I can see it in my clothes. they fit better. I am happy with that but for me the reward is in the number.
I keep the mantra in my head " eat when you are hungry stop when you are full". I know several times I was full but continued to finish anyway. there is a difference between feeling full and satisfied. I guess at that time,if you can, should stop and think why do I want that extra slice, bite piece?
I am told good strategy is walk away and many times you return in 5 minutes and you no longer want that extra.
