It's a big commitment and be difficult so I wish you luck on you lifestyle changes. :) I heard chickpeas have all but one amino acid so there a good protein choice for vegan diets. I read it when looking at vegetarian elimination diet articles last night before bed.

Thank you Leah and everyone for the support! So far we seem to be actually getting too much protein! For lunch I had black bean pasta (gluten free), a 2 oz. (dry) serving is 25 g. protein, plus 2 Impossible meat balls, for another 8 g.

That is really awesome! Nutritional yeast is awesome to make cheese sauce or use as a topping for pasta and has lots of vitamins. I was vegan for 9 years but it was a bit tough for me, I’m sorry, I like cheese too much 😬☺️
