I have followed low carb for years and did quite well until stress with my job and my mother affected me. I am a stress eater and gained back much of what I had lost and maintained for 8 years. I have to cook for my mother and am very busy. I cannot concentrate on a total low carb diet at this time. I am following my own version of a moderate carbohydrate diet. This includes: no sugar and no white flour; a very little carb restricted bread-type products; breakfast is 2 eggs or a yogurt parfait with layers of whole yogurt, berries, splenda, & flax mix. The flax mix is 2 Tlb fax ground, 2 Tlb unsweetened coconut, 1 1/2 tsp Splenda, 1/2 tsp cinnamon, 1 - 1 1/2 ounces nuts (walnuts, pecans, almonds)all ground together. Lunch is typically low carb with protein, cheese & lettuce or low carb soup. Snacks include raw carrots. Supper has been what I am cooking for my 83 year old mother and my husband with moderation. Supper is not low carb. I don't overuse fats but only use butter and olive oil in moderation but I don't worry about using them either. I am a meat eater with lots of beef, chicken, pork and fish in my diet. I drink about a can of diet coke with Splenda or RC cola a day and drink coffee and tea. I do take vitamins. I do enjoy a glass of red wine a few times during the week. This is my special treat!
