I managed to make it on here this AM.

Have been enjoying reading others journals about "planned cheats" and it started me thinking that Easter is coming up. I'd better start doing some planning so my "planned cheat" doesn't become a catastrophe. Am thinking a healthy fruit salad?

What is everybody else doing for Easter?

Thankfully, my husband is doing this with me, so we're staying on plan. This kids are lucky this year - they get what they like in their baskets, instead of the split with what we like, too!! We're already planning Thanksgiving in our house. We've decided to invite all the folks that don't have family here over. Normally, we go to the inlaws place, but they don't appreciate that we make that 4 hour drive, when we still have animals that need cared for at home. So, we're dropping that plan for this year, and doing what we want. We'll make traditional stuff, but our stuff too, and know that there will be enough people to take home the left overs. Hope you do well, today and everyday.

MsMontana-yes it is so much easier to stay on plan when it is at your home! You don't know how lucky you are that you have your husband doing this with you!

I absolutely do know how lucky I am. This man would do anything for me, and he frequently does! I can imagine trying to do it without him - he's a huge support - but it would be h*ll.

Oh Buffy, we used to fix deviled eggs, potato salad, baked beans, you name it we had it. Even a banana pudding. But its only us two and so I don't fix all that any more........Bren

BuffyBear - I'm thinking Ham, Cauliflower Au Gratin, Green Beens, Deviled Eggs and a low carb cheesecake. There are some great recipes on the internet for all of the above. If you need some, let me know as I have collected some over the years. Good Luck!

Buffy- leg of lamb is a must for our family at Easter along with asparagus, parsley baby new potatos, fresh green beans w/lemon and garlic. Dessert will probably be angel food cake w/fresh fruit. My mom is doing all the cooking this year and she is a very healthy cook so I don't have any worries. She even said she will run the menu by me if she makes any changes just to be sure it fits my plan. Happy planning your holiday!

I'm with Weirdangel, only I don't know if I can fix a cheesecake. But I'm glad you posted this as it reminded me I've got to get a package off to my mom for Easter and I've got to get a grocery list put together for next week's shopping trip...gosh, Easter's just 10 days away!!!

A fruit salad for Easter????? I keep thinking about it and I just can't decide - do I want chocolate or not, do I need chocolate...no...do I want chocolate....not really. I think I would rather have a nice new top for summer or a new wind chime for the garden.....mmmmm I can't decide....

Thanks for all your ideas - Guess I should have mentioned that we'll have 6 of our grandchildren so I tend to make the menu Kid Friendly (thus the fruit salad).
