Today is my wife's birthday. Due to work schedules, we started celebrating last night. I baked a 4-layer chocolate cake with sour cream chocolate frosting FROM SCRATCH. Now, I warn you in advance of 2 things. First, this cake is delicious, so you will want to eat it. Second, it is NOT low calorie. However, it has an unbelievably low glycemic index. It will cause almost no insulin response.
The cake has 28.89g of carbs of which 22 are fiber and 2.78 are sugar. It has 17.11g of protein, as well. The frosting has 102.62g of carbs, of which 95.2 are fiber and 3.75 are sugar. The frosting has 6.81g of protein. The bad news is that 1/8 of this frosted cake has 528 calories. The good news is that the cake is so large (and fiber-full) that a half-slice is plenty. I plan on doing that in the future. If you eat a half-slice, you will only take in 3.32 g of sugar and 264 calories. That works for me.
