as suspected, since almond milk is mostly water, it turned to a block of ice. 2nd recipe from Lazy Keto app was a fail (cinnamon rolls were just ok). I'll see what I can do to salvage.

Ice cream, I salvaged it by blending in more coconut cream. Not impressed with the Lazy Keto app recipes. Regular googling for recipes is better.
