Banana Zucchini Carrot Bread
Classic banana bread (or muffins) with a twist.
Ingredienser
Anvisningar
- Pre-heat oven to 350 °F (175 °C). Melt butter and pour into large bowl.
- Add bananas and mash. Add grated zucchini and shredded carrots. Mix well.
- Add sugar, beaten egg, and vanilla.
- Sprinkle in baking soda and salt and mix. Add flour and mix well.
- Pour in 4x8" loaf pan or two muffin trays (6 large each). Makes 1 loaf or 12 large muffins.
- Bake loaf for 60-75 minutes. Bake muffins for approx 20-30 minutes.
- Let cool on tray and serve.

Excellent recipe..also added cinnamon, nutmeg, and replaced some of the flour with ALMOND Flour, which is just ground almonds...very good texture.

absolutely delicious. will certainly try them again with the applesauce this time! does anyone happen to know how many points they are? i'd like to bring some to a friend on weight watchers

awesome breaky snack. used the suggestions above, substituting applesauce for the butter, adding cinnamon, and walnuts. Used turbinado sugar, and Truvia.

Super yummy muffins!!! Perfect for farmers' market season. I didn't change anything except that I had only two bananas, so I increased the carrots a little. These came out perfectly and will enjoy one for breakfast tomorrow morning. :)

yummy, I did the alter version with splenda, whole wheat flower and apple sauce. I made them as muffins and eats as a quick and easy breakfast. I pop them in the microwave for about 15 seconds and they are great.

I loved these muffins the first time I made them. I am making another batch as we speek. This time I added a 1 teas. cinnamon and about 1/4 cup walnuts. I bet they will be even better. I will let you know. :)
