I have a nearly14,000 calorie surplus for the month of December so I've gained the amount of weight that the simple math of calories in versus energy expended would indicate. I see two major areas for improvement.
First I need to plan my meals and work my plan. if I don't eat three reasonable meals a day I often find myself gorging on whatever is handy later in the evening rather than just having a reasonable before bed snack.
Second, and more difficult because it challenges millenia of human history is how do I eat responsibly when I go over to my niece's house, which I do quite regularly because they live close. I love her dearly and I love her daughters dearly. My niece's grandmother, my sister-in-law's mother, survived world war II in Eastern Europe and expressed her love by making unreasonable amounts of food and expected that you would reciprocate that love by eating unreasonable amounts of food. That tradition has carried down to my niece. I don't seem to be able to find a way to navigate the challenge of maintaining a calorie deficit on days when I visit her. Forget a calorie deficit, even just a slight surplus would be a victory. If anyone has similar challenges and have found ways to effectively address them please share.

As someone who had WW2 survivors from Easter Europe in my family (no longer alive), I know exactly what you are talking about. The main strategy for the pressure to eat that you are talking about—without offending or seeming ungrateful—is to load up your plate with a little bit of everything that is served. This preempts the urging later of “but you still have to try this or that.”Use the lower calorie stuff (like a salad, veggies, plain bread, etc) to fill out your plate so it looks like you have a heaping pile of food in front of you. Then eat slowly, talking a lot and praising the food a lot. The prodding to refill starts when the plate is half empty, so just keep it looking like it is full, perhaps adding a spoonful of this or that, and making sure to be vocal about how irresistible the food is. You want to avoid the hostess literally shoveling food onto your plate saying you are eating too little or bemoaning that your plate is empty. You definitely don’t want to be eating faster than your hostess because she would be extremely uncomfortable eating while her guest is sitting there with their plate cleaned—this will prompt a great deal of urging to continue eating. Also, if the food is coming in courses, tell the hostess that you are keeping a little space for all the delicious food ahead (like a dessert), so you don’t get that refill of soup, etc. Keep telling them how you enjoy the food, show interest in how it’s made, and, again, eat slowly—this is really what it’s about.
