I'm following the kidney diet well, so I'm not sure why I'm gaining weight. I'm not eating junk food or anything. But I'm not tracking what I eat. It takes so long. Everything I'm making now is a new recipe that I have to type in by hand. Even no-salt mayonnaise and low sodium bread because I can't get it in stores around here, so I make it by hand. And making all that food takes time as well, so I thought I could get away with not keeping track. I guess extra calories are slipping in there somewhere, though.

I'm exercising better - walking at least a mile a day.

your answer is in your post 😉 "I'm not tracking what I eat". it's so easy for us to over eat on any diet if we don't have a sense of how much we're consuming. You could try to find similar foods to put in your journal, so you don't have to manually type them up. an estimate is better than nothing 😄 I hope that you find something that works for you!
