Woke up to a BG of 174 this morning, which is nuts. I hadn't eaten anything since 10 hours earlier. Yesterday's BG was 145, well within range for a Diabetic. 😟

For the first time in my life I'm struggling enough to get enough calories. If that weren't so tragic it would be funny. When the Lion's Share of your favorite foods are literally life-threatening in a measurable way you tend to lose your appetite for them, which I never imagined was possible. It's been recommended that I do a 1900 calorie a day diet to get started. Yesterday I think I made it up to maybe 1200. I'm certainly getting a calorie deficit and I'm not going to complain about a 14 pound weight loss.😏

Yesterday I joined the site and,guessed my weight at 220. I didn't know what it was two weeks ago when I weighed in at the doctor because I was afraid to look at the scale. 233 lbs 😲 At today's doc visit, not only have I dropped 10 lbs, but my bp was down to 127/80. *happy dance*

Coconut Curry Squash Soup
5 medium yellow squash cut up in chunks to cook
1/4head of cauliflower cut up
1 bunch spring onions OR 1 medium yellow onion
1 quart fat free chicken or vegetable broth plus any extra water to cover for simmering
1 can low fat coconut milk
2 tsp of curry powder
1 Tblsp olive oil
1 Clove chopped garlic
1 fresh lime
fresh basil leaves cut chiffonade style for garnish (finely cut in strips. Try to cut without sawing at the leaves)
heat oil to medium in heavy bottom stock or dutch oven and cook onions until just translucent, add garlic and curry powder a d cokk a minute longer until curry is,very fragrant
deglaze oan with sime stock then add remaining, add squash and cauliflower and cook until very tender.
drain all but a cup of liquid. at this point use an immersion blender until all ingrdients are smooth. You can use a blender too. Add coconut milk and turn heat back on the pot at Lowes am to bring up to temp. salt and pepper to taste and add lime juice a Tblsp at a time to taste. you can add more curry at this point if it's not enough for you, but next time start with more curry. I use a full Tblsp but I like a lot. Garnish with a tsp of basil chiffonade.
