It's Frittata Friday again, and since I didn't do a lot of cooking, this week, that yielded leftovers; I'm going to keep it simple. My frittata will contain a delicious and nutritious mixture of applewood smoked bacon, broccoli, leeks, cheese, and just enough garlic and seasonings to keep it interesting; and as usual, I cook my frittatas in butter. Just as exciting, at least to me anyway, is the Mexican inspired simi crustless quiche I'll be making, tomorrow, which will be for breakfast for most of next week. It will contain: Mexican Chorizo, green onions, jalapeno peppers, sour cream, queso fresco, cheddar cheese, black olives, and maybe some Eden Organic Black Soybeans. I'm looking forward to how this will turn out, as I originally came up with the idea about a month or so ago. I love experimenting with low carb recipes! :-)
