Made a big batch of healthy banana muffins with my daughter. They turned out very tasty! My yield was 30 muffins. I posted the recipe below. I used 5 bananas and a touch of avocado oil spray.

Healthy Banana Protein Muffins Ingredients: • 4-5 ripe bananas, mashed • 2 scoops vanilla collagen powder • 1 cup fat-free Greek yogurt • 1/2 cup coconut sugar (or a mix of coconut sugar and coconut brown sugar) • 2 large eggs • 1 1/2 cups oat flour (you can blend oats to make your own) • 1/2 cup whole wheat flour • 1 teaspoon baking soda • 1 teaspoon baking powder • 1/2 teaspoon salt • 1 teaspoon vanilla extract • Optional: 1/2 teaspoon cinnamon Instructions: 1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it. 2. In a large bowl, mash the ripe bananas until smooth. 3. Add the Greek yogurt, eggs, vanilla extract, and coconut sugar to the mashed bananas. Mix until well combined. 4.
