So i didn't end up making the chicken today, instead my mom and i made an egg casserole lunch! mixed a dozen eggs, whisked into a bowl, and threw in some cut up veggies(we used mushrooms, broccoli, onions, and tomatoes), some shredded cheese, and some salt and pepper, then baked it. it's delicious, filling, and a great way to get in some vegetables, which i'm kinda bad about sometimes. Since we cooked for lunch, we decided to make the stuffed chicken tomorrow!

i'm getting very lax in my eating, i feel like. i want to try to cook more to get out of that mindset!
