What do you use to saute this meal? Looks dekicious

I used water for the veggies and 2 tsp EVOO for the tofu and potatoes (boiled earlier in the day and cooled). I rarely eat any type of oil, but have not figured out a way to make satisfying crispy potatoes without it.

I know there's a lot of debate on oil, but my personal feeling, from the information I've seen, that a little in moderation won't hurt, especially if you go with EVOO

WritingWyo, I agree with you completely about a little olive oil use not being a big deal. I just try to keep it low in my day to day meals so that I don’t go overboard in my saturated fat intake. Once I get my next set of blood work done next month, I plan on reassessing if I want to incorporate it more into my diet.

I don't worry about the sat fat in it so much, but the calories can add up quickly, especially since I make room for nuts and seeds every day. All a question of balance and personal WOE 😊👍
