Hungry today. Keep picturing crispy smashed potatoes and scrambled eggs. Haven’t had a high calorie day in about 3 weeks. Think I am going to allow myself one today so I don’t go off the rails for 2-4 days. Got 6 smashed baby potatoes crisping in the air fryer as I enter this. Not going to make the eggs since I have committed to WFPB at least until I get my next round of bloodwork next month.

what are your goals for the blood work? I can attest to the success of switching to WFPB and lowering cholesterol.

I had no idea what WFPB meant and had to google it! I understand about craving potatoes. I have been trying to follow a low fat diet for the last 2 months and my doctor wants me on a plant based diet with minimal or no processed foods. It's hard to do and I find the low fat part easier. I've been having baked potatoes with barbecue sauce on them instead of butter. I just bought a bag of baby gold potatoes, 80 calories for 3. I bought I Can't Believe It's Not Butter Spray and will microwave the potatoes and use the spray since I can't have butter. Not really allowed per my doctor but I like potatoes and they are difficult to eat without butter. I allow myself eggs, about 2-4 a week because of the fat and cholesterol. I prefer them scrambled but have been having 1 hard boiled egg a couple times a week. Hope your bloodwork goes well. My issue is with inflammation which is why my doctor says to avoid processed foods (so hard to do)

JustBananas, looking to lower both my A1C and my cholesterol. I made myself 2 servings of veggie flatbreads for dinner last night and the extra calories seemed to do the trick. I was already eating very little animal protein when I saw a post by Superman about how much “lighter” he felt when he went plant based for a few months. Curious, I watched Forks Over Knives and realized I could make the changes in my diet pretty easily. I have been enjoying this way of cooking and I honestly feel so much better. The weight is coming off at a reasonable pace and for the first time in decades I am actually looking forward to seeing what my blood work tells me. Thanks so much for your support. I enjoy reading your posts and comments.

Fritz’s, thanks for your support. I know what you are facing. Have you tried replacing “I Can’t Believe It’s Not Butter” and the high sugar BBQ sauce with a little bit of olive oil? At least then the fats you eat will be more of the mono and poly unsaturated type and while olive oil is still a processed food it is a more positive step in the right direction. It sounds like you are doing well crowding out the processed stuff with more Whole Foods. I can tell you that my InstantPot has become my major food prep tool because I can prepare lots of whole grains, beans and potatoes in a very short period of time.

Karen - I allow myself olive oil normally. I don't consider it a processed food even though it is in a bottle which has a bar code on it. I look at the ingredients and olive oil just has olive oil in it. But for low fat I am avoiding even the good fats like olive oil, nuts and avocado. It's not a forever WOE but it has helped me to lose over 10 pounds in 4 weeks before I just stopped losing weight. I may try to spritz some olive oil on the tiny potatoes to see if I like it. The spritzer allows me to use just a little olive oil. I don't know what an InstantPot is and I don't really cook much.
