You, too, buenitabishop! ScorpionCard -- the recipe is on the King Arthur Flour website if you want to try it. It's all rye, no yeast. It does use quite a bit of honey and molasses, so it's mildly sweet. I'm trying not to go overboard on added sugars, but I figure all things in moderation. It's supposed to be baked in a Pullman pan, but I was baking it in a large bread pan covered in foil for now. I just ordered a Pullman pan, so I'll be curious to see how it turns out

RYE BREAD! Oooooh man, there's not a day that I don't miss the smell of the bakery I worked at in High School. Despite being on keto I still love the smell of freshly made bread and active yeast!

tauceti422 -- oh my goodness the smell! Believe it or not, though, when you ONLY have homemade bread, the smell no longer becomes the siren song demanding you devour half the loaf then and there. My husband and I have baked nearly all our own bread for 30 years. When it comes out of the oven, it's just...well...bread. It's just standard fare, not the rare and wondrous treat that homemade bread was when I was a kid
