I skip the second rise and can't tell any difference in the end result.

Can't wait to see when it's done! I used to bake Banana Nut, Cranberry Nut, & Carrot Cake w/Nuts too. Now, I just purchase Marie Calendar's or just purchase already made Pumpkin Pie's too. Use to make my own Pumpkin pies too. We just had some Dutch Apple Pie and we're waiting for the Bird to make its grand appearance in about an hour more. :-P
