I've eaten just that countless times this year. I've settled on 2% cottage cheese. I buy 2lbs of lean deli meats a week, mostly boar's head turkey variations with occasional Polish ham.

Flatten the slice, add a layer of cottage or cream cheese, season as you like and roll in around real cornichons (lots of fake with sugar).
