In honor of Melissa's tribe visit to Strasbourg, I made a flammeküsche ou tarte flambée, the Alsatian pizza. It is supposed to be made with yellow onions, crème fraîche and lardons (bacon), but I only had red onions and for FS, I used turkey cutlets with at bit of liquid smoke and cream cheese. Still pretty good. About 460 kcal for that pie.

Thank you. Super easy to do, flour+water+yeast for pizza dough rolled very thin, mix an egg yolk with cream+salt+pepper+nutmeg, cook the bacon, then soften the onions in the fat. Cream on dough, then onions, then bacon, oven at 425°F until edges get golden. That's the traditional version, but you can add cheese, spinach, anything.

Oh my!!! I just saw this! How cool! I have had it but just in a tiny French restaurant on the border in a little town about 13 years ago. Also the one German woman whom we have known for ages and often stay with her makes this. And!!! I do actually know how to pronounce it! Yay! Hahah!
