what kind of noodles are those? They will be my downfall.

They are a thick GF rice noodle that I picked up from an Asian Market ☺️

Please tell me ingredients and how to cook this. I’m on a GERD diet. Very strict.

Ingredients:
- thick rice noodles
- vegetables of choice (I used jalapeños, bell pepper, and onion)
- avocado oil
- sesame oil
- coconut aminos (soy sauce or liquid aminos also would work)
- Chinese 5 spice
- ground star anise
- turmeric
- garlic powder
- paprika
- hot sauce of choice (I did sriracha and cheeba gold)
- umami mushroom powder
- truffle zest if your feeling fancy

Sauce:
Measure about 1/4 cup of coconut aminos and then add the hot sauce and spices (I add most to taste so I don’t know exact measurements).
1. Cook the noodles - try to have them just under cooked so they don’t end up over cooked. And then rinse with cold water.
2. Heat a tsp or so of avocado oil in a wok over medium high heat and sauté the vegetables. I add some extra of my spices to the vegetables as they cook.
3. Once the veggies are cooked, reduce the heat to warm. Start cooking your fried egg in a separate pan. Add the noodles and pour the sauce over the noodles. Mix and increase the heat to medium. Top the noodles with a little sesame oil and cook until the noodles are warm again.
4. Plate and eat! I like to top mine with everything but the bagel seasoning or sesame seeds. 😋
