Looks very satisfying. I'll have to remember that idea. I usually put homemade pico de gallo on a baked potato. Another thing I've tried is baked cabbage and onion (with a Dijon, white vinegar, lemon, and olive oil dressing). I can't have potatoes often, so it is a treat. I'm jealous of your pic! :)

Thank goodness I will have support here as well! I have been plant-based for almost 4 years I am still learning about and trying new recipes. I am working McDougall program with starch as the focus! I have done well! I think you you will do awesome!
