I never paid that much attention to the carbs in some veggies. Like onions, I love them, but they are filled with carbs and I need to reduce how many I use in recipes! I was planning on making chicken salad today with leftover chicken, and typically, I would use yellow onions and not think about it. But now, I'm going to use green onions since they have less carbs. Plus, I was going to use the left over bones to make a homemade bone broth. After looking up the carbs in homemade bone broth using carrots, onions, celery....I decided I'm going to leave the veggies out. According to this site, home recipe bone broth has 8.47 g carbs per serving. Since, I'm in the introduction phase of Adkins and can only have 20 carbs per day, that is almost half my daily carbs! I'm learning a lot this go around. Before, I ate veggies with no care and just figured they were healthy and most likely low carb. Now, I know I need to watch my portions on veggies. No more eating a small steamable bag of brussels sprouts....lol

Green onions is a good substitute. We have discussed the broth situation a few times and I do not think a keto made broth will have that many carbs. But it is hard to say for sure. It is nice to do a clean very low carb induction and get that feel. I am doing one myself right now just because I can. Oh... another thing people underestimate is how much carb there can be in spices. You are doing great... thinking about it and learning new things is what it is all about

I can relate ... Never thot onion cud add up so much.. reduced a lot of indian gravy foods after I started logging recipes in fs.. most of them were onion n tomato based and the carb content went up crazy... I’m learning to tweak recipes and substitute things to make them low carb.
