I feel so accomplished! Two nights in a row I have made a healthy chicken dinner for myself and my roommate and two mornings in a row I have cooked myself a healthy breakfast! Hopefully I can keep this up and start cooking more. I really don't like cooking, but the past two days the meals have been so easy it hasn't really bothered me. I don't like the waiting. I hate when a meal takes half an hour to an hour to prepare, then you have to wait forever for it to cook and then the eating is over in like five minutes and all you are left with is the mess you made in the kitchen! I usually do easy stuff like soup, spaghetti os or salads because you only need one pot, a spoon to stir it and eat with and whatever dish you need to put it in! But, a couple of extra dishes hasn't seemed like such a hassel lately and I just exercise while the chicken is marinating in the fridge! Talk about multitasking! So anyway...I am having an okay day. Hubby is not in port anymore (he was in Guam over the weekend) so we are back to just emailing. We did get to see eachother while he was in Guam though! Via webcam! You have to love technology! We are going to try and do it again when he hits his next port. Unfortunately, we couldn't really talk because we were just on yahoo messenger and couldn't figure out if there was a way to do the microphones, but just seeing eachother and chatting back and forth was so nice! Glad to hear you got to 'see' hubby. I can imagine how hard it is to be separated for such long periods! I am the same way about cooking-- it seems to take forever and then be over way too fast! Sounds like you have found some good food choices, though, and that should help you keep your resolve. There are lots of cookbooks out that are for meals that take less time to cook, and a crock pot is always nice-- one pot meal that you start in the morning and by the time you're ready to eat, it's done! Congratulations and good luck!!! :-) I have gotten way off track, but your post inspired me. I have on tip on the cooking front. I usually good one full meal a week then save the leftovers in those square Glad containers. If you don't mind leftovers this is super helpful. Not only do you have all your portions neatly laid out, all you need to do is pop it in the microwave! Keep going and good luck!!!
