We wanted pizza but didn't want to cheat. Using CarbSmart Mission whole wheat tortillas, one personal pizza is just 9 net carbs and under 300 calories! Tonight we used pepperoni, mozz, onion and parm cheese. For those watching fat cals, just use a leaner meat. It sure satisfied the crave for pizza and it was quick and easy.

For a crispy thin crust, perforate then nuke the tortilla for 60 sec. Top it then nuke/bake. Can also make tortilla chips(pre cut then nuke) or hard taco shells(fold with a spacer - might have used two shot glasses - then nuke). if you don't perforate it will puff up, which reminds me that I've been wanting to make a low carb bunelo.
