I didn’t know what I wanted for dinner and I didn’t want to go to the grocery store, so I used what I had on hand. Garlic, onion, bell peppers, zucchini, and apple chicken sausage with a can of diced tomatoes. Turned out pretty good!

Going to put a plug in here for a great book I recommend to everyone on the journey of transformation--Victoria Moran's "Fit from Within". This a tiny book consisting of one or two page chapters that offer suggestions on how to change the thinking and feelings we experience with regard to food, weight, body image, etc. I have given it as a gift more than a few times over the years, and everyone loves it. Your pretty and colorful dish reminded me of one of the chapters in which Victoria, who has maintained a 60+ pound weight loss for decades and who has written several great books on transformation (another great read Fat, Broke and Lonely No More) advises the reader to set a pretty table, even if you are only cooking for yourself and to cook pretty food, full of colors and textures. Put out a nice glass. No car eating, counter eating, no in front of the TV eating, no drive-through windows, etc. We discuss food around here all the time but very little about behavior, and yet if you pop onto the National Weight Control Registry and look at the results of their weight loss survey, the respondents' diets were all over the board. What the long-term weight loss maintainers had in common were their behaviors--they track their food/calories (regardless of what they ate). They move their bodies at least one hour per day. They watch one hour or LESS of television per day. They weigh themselves at least once per week, many more often. That sort of thing. I have maintained a 90+ pound weight loss for a long time, and I can honestly say it is about the thinking and the feelings that lead to the actions. In other words, it is about behavior. Losing weight is not easy, but maintaining it over the long haul is harder. To do that, at some point the journey has to become about transformation and not just the body--the mind and spirit too.

Ttina Bee- I love the idea that it is all about behaviours and it is also all about attitudes. No poor me stuff. Like poor me I can't eat this ___ fill in the blank. It is not nutritious and it is often filled with chemicals and non-food stuff yet I feel sorry for myself??? A drastic change in thinking is needed. I will definitely look up that book. Habits make the person. Change the habits, change the person!

TtinaBee— I am so with you— half of the joy of eating can be in the presentation. I went to a conference at a great restaurant a couple weeks ago. Fabulous decor and food. Huge amount of prime rib but the sides consisted of two small fabulous roasted carrots and a small amount of roughly mashed rustic potatoes with the most unusual seasoning. The rolls were plentiful but smaller sized so you didn’t have to pass them up because they were so huge. A table cloth, a candle, nice music. An attractively set table encourages you to slow down, taste your food and enjoy the meal.
