What is Italian vegan sausage?

Its made by a company called Field Roast who makes a line of vegan (meatless and dairy free) sausages. They have Italian, brats, chorizo, applewood smoked, and others I can't remember them all. Very good stuff! The chorizo and Italian are my favorite.
